Boning Knives

There are two main types of boning knife, the first type is longer with a rigid or flexible blade. The flexible bladed knives are similar to filleting knives and can be used equally well on fish an poultry.

Blades between 12.5cm/5in to 20cm/8in.

The second type is held like a dagger and has a rigid blade. In both cases the tip of the blade is used so a fine point is essential.
